Grain-Free Berry Tartlet
Desserts with benefits? Dig into this grain-free tartlet, packed with powerful antioxidant-rich berries. It's so healthy, you can have it for breakfast!
Recipe:
Ingredients (Makes 6 tartlet crusts):
1/4 cup, plus 2 Tablespoons coconut flour (not divided)
pinch salt
2 eggs
2 Tablespoons melted coconut butter OR coconut oil
1 Tablespoon honey
Filling: defrost and mash 1 cup of frozen or fresh berries and set aside
Directions:
Preheat oven to 350F (177C)
If using coconut butter instead of oil, melt the coconut butter in a large, microwave-safe bowl
Whip the honey into the coconut oil (or melted butter) and let cool slightly
Whip the 2 eggs in next
Add flour and salt, mixing with a fork, then roll into 6 balls
Press each ball into a non-stick or oiled cupcake tin, gradually shaping the dough into tartlet crusts
Bake at 350F for 10 minutes, remove from the oven and spoon in your desired filling, then bake another 10 minutes! Voila!
