Grain-Free Berry Tartlet

Desserts with benefits? Dig into this grain-free tartlet, packed with powerful antioxidant-rich berries. It's so healthy, you can have it for breakfast!

Recipe:

Ingredients (Makes 6 tartlet crusts):

  • 1/4 cup, plus 2 Tablespoons coconut flour (not divided)

  • pinch salt

  • 2 eggs

  • 2 Tablespoons melted coconut butter OR coconut oil

  • 1 Tablespoon honey

  • Filling: defrost and mash 1 cup of frozen or fresh berries and set aside

Directions:

  • Preheat oven to 350F (177C)

  • If using coconut butter instead of oil, melt the coconut butter in a large, microwave-safe bowl

  • Whip the honey into the coconut oil (or melted butter) and let cool slightly

  • Whip the 2 eggs in next

  • Add flour and salt, mixing with a fork, then roll into 6 balls

  • Press each ball into a non-stick or oiled cupcake tin, gradually shaping the dough into tartlet crusts

  • Bake at 350F for 10 minutes, remove from the oven and spoon in your desired filling, then bake another 10 minutes! Voila!

  • Enjoy with a big cup of tea, coconut ice cream, or just as is :)
