Recipe Contest Winning "Curried Shrimp Soup" Recipe

Jessica took a simple curry mix from a local grocery store and turned it into something incredible. Combining it with the idea for a healthy and fun summer soup (and her husband's LOVE of shrimp), she put this little number together and captured it all with her beautiful food photography!

Curried Shrimp Soup

Ingredients (Serves 2):

  • 1 can coconut milk

  • 1/2 curry mix

  • half lb. of shrimp (substitute with chickpeas, mushrooms or tempeh for a vegan option)

  • 1/2 cup basmati rice (cooked to package directions)

  • 1 bag frozen cauliflower

  • 1/2 cup water

  • dash cayenne pepper

  • dash Worcestershire sauce

  • dash lime juice

  • cilantro & red pepper to garnish

Directions:

Add coconut milk to sauce pan with cauliflower, curry mix and water. Set heat to medium. In a separate pot, cook basmati rice according to package directions. Allie's favorite method: Add 2x the volume water as there is rice (i.e. 1/2 cup of rice = 1 cup water) and bring to a boil; add rice into boiling water, cover with a lid, and reduce heat to low immediately. Do not lift the lid until rice is done steaming (about 20-30 minutes). Remove from heat and fluff lightly with a fork. When cauliflower thaws, blend together with immersion blender, add Worcestershire sauce and cayenne pepper to taste (depending on heat level desired), then reduce to a simmer. Add lime juice to cooked rice. Saute shrimp while soup simmers. When rice & shrimp are done, ladle soup into bowl. Add a scoop of rice & shrimp. Garnish with cilantro & finely diced red pepper.
