Roasted Italian Carrot Fries

We're finishing up our carrot harvest and making roasted Italian carrot fries! These are great alone or dipped in marinara sauce.

Recipe:

  • Preheat oven to 375F and line a baking sheet with parchment paper

  • Peel and chop 4 large carrots into large matchsticks (cut in half twice lengthwise and once horizontally)

  • Toss carrots in 1 teaspoon melted coconut oil, avocado oil or grapeseed oil (high smoke heat) to coat evenly

  • Spread carrots evenly on baking sheet and sprinkle 4-5 dashes garlic powder and several good shakes of dried Italian herbs.

  • Tis' the season to harvest fennel (or buy it locally). Mince a sprig of the feather-like leaves and sprinkle it atop the carrots. Alternatively, add 1/2 a teaspoon of fennel seed.

  • Roast the carrots in the oven for about 25 minutes, or until soft.

  • Enjoy as a side or a snack, with marinara sauce or a creamy avocado!
