Baked goods with benefits: Kombucha Muffins!
Ingredients:
2 cups gluten-free flour blend (or whole wheat pastry flour)
1/2 teaspoon baking powder
1.5 cups kombucha (pick your favorite flavor and add complimentary spices!)
1 egg (or chia seed/flax egg - be sure to grind seeds in a coffee grinder if you have one)
3 Tablespoons honey (sub. maple syrup, agave, or favorite sweetener)
Optional add-ins: spices & herbs, nuts & seeds, dried fruit, chocolate chips, shredded coconut... the list goes on! (I used ginger kombucha and added cinnamon, nutmeg, turmeric & fennel to my fall-flavored batch!)
Directions:
Preheat oven to 350F
Stir together all dry ingredients with a fork or whisk
Add in wet ingredients and stir evenly to combine - careful not to over-stir so that the muffins stay fluffy (over-stirring tightens proteins in the flour to make rock-like muffins)
Pour into muffin cups
Bake for 15-20 minutes
Enjoy warm and as-is or with your favorite spreads or creamy beverage
