Baked goods with benefits: Kombucha Muffins!


Ingredients:

  • 2 cups gluten-free flour blend (or whole wheat pastry flour)

  • 1/2 teaspoon baking powder

  • 1.5 cups kombucha (pick your favorite flavor and add complimentary spices!)

  • 1 egg (or chia seed/flax egg - be sure to grind seeds in a coffee grinder if you have one)

  • 3 Tablespoons honey (sub. maple syrup, agave, or favorite sweetener)

  • Optional add-ins: spices & herbs, nuts & seeds, dried fruit, chocolate chips, shredded coconut... the list goes on! (I used ginger kombucha and added cinnamon, nutmeg, turmeric & fennel to my fall-flavored batch!)

Directions:

  • Preheat oven to 350F

  • Stir together all dry ingredients with a fork or whisk

  • Add in wet ingredients and stir evenly to combine - careful not to over-stir so that the muffins stay fluffy (over-stirring tightens proteins in the flour to make rock-like muffins)

  • Pour into muffin cups

  • Bake for 15-20 minutes

  • Enjoy warm and as-is or with your favorite spreads or creamy beverage
